Pina Colada Cupcakes & More

Hi All!:-) Based on the feedback I got from my blogging survey I’ve decided I will share recipes on the blog sparingly. So since I won’t be sharing too many you better believe that the ones I do share are the BEST!:-)

Also, I will leave a link to an inspiring decorating or design related article at the end of all my recipe posts so that those who aren’t interested in recipes can still leave feeling fed.;-)

I came across the recipe I will be sharing through a “dinner club/group” I’ve been part of for the past 9+ years.  In our dinner club we take turns hosting and the host picks out and assigns recipes to the rest of the group.

I love our dinner group because it forces me to try recipes I wouldn’t have picked out on my own!

Betty Crocker’s Pina Colada Cupcakes were assigned out to another group member for our dessert a few months ago.  They are so delicious and I could hardly believe they were made from a cake mix!

So recently when I was thinking of a yummy (but easy)  treat I could make as a thank you to some awesome neighbors I immediately thought of these!

Here is my tweaked version of the recipe:

Pina Colada Cupcakes with Umbrella Topper 

Ingredients

1 box yellow cake mix

3 eggs

1/3 cup vegetable oil

1/4 cup water

1 tsp imitation rum extract

1 (8oz) can crushed pineapple, undrained

Pina Colada Cupcake Ingredients

Frosting

1 container Whipped Fluffy White frosting

1 tsp imitation coconut extract

1 tsp imitation rum extract

Directions

1.  Preheat the oven to 375 degrees.

2.  In a large bowl put in all 5 cupcake ingredient and mix together on a medium speed for 2 minutes.

3.  Pour cupcake batter into evenly into cupcake liners.

4.  Bake in oven for 15 minutes or until fork inserted in center comes out clean.

5.  Cool in pans 10 minutes and then remove from pans to plate. Cool completely about 30 minutes.

6.  Mix together frosting ingredients and frost cupcakes

7.  Top frosted cupcakes with an umbrella toothpick topper

Note:  I bought my umbrella toppers at Party City.  One package contained 20 umbrellas and only cost 99 cents!

Pina Colada Cupcakes Dessert

These would be great for baby showers, cookouts, or taking to your neighbors in the middle of the winter!:-)  They are so super rummy yummy!
